The forecast this week: BUSY. Nuts. CRAZY.
My husband has a million meetings this week and I have lots to do to get ready for this month's PTA meeting as well as being all excited about my 31st birthday. I LOVE birthdays and if you know me in real life, this isn't a surprise! I shall spend this year's birthday in a PTA meeting but that's OK...I get to socialize with lots of people I like. I'm hoping that I can get this much cooking done between soccer, playdates, a doctor's appointment, a get-together at the end of the week and everyday stuff so I'm utilizing leftovers a bit.
Embrace the power of leftovers. :)

pancakes, scrambled tofu, and roasted veggies?!? That's quite the combo! LOL
I made some pumpkin chocolate chip cookies last for the first time that turned out amazing! They're not vegan, but I bet your pumpkin chocolate chip bread will be delicious too! =]
Keep up the good work, mama.
Mmm...I love ANYTHING pumpkin chocolate chip, I swear.
I PROMISE that it isn't a weird combo; I do up the tofu like scrambled eggs and as far as the roasted veggies go, it's mostly potatoes and onions with maybe a few carrots...not much different than hash browns! :) SO it's a vegan version of breakfast for dinner!
If there is some leftover bread, maybe I'll pack up a slice tomorrow afternoon...
