Prepping for Winter.

I'm so sorry that I haven't been posting; in fact, when I see this site bookmarked on my computer, I almost feel guilty because I haven't been writing.  We have been SO busy.  Obviously I am home with the three kiddos for summer, I have been training for a half-marathon as well as practicing my yoga, and we have been having construction done on the house.  I just haven't been able to commit to more than a few minutes at a time on the computer and that's where I am today.

I have been picking up my CSA every week at the farmer's market and we have been really enjoying our produce.  We have received strawberries, spinach, two types of peas, kohlrabi, romaine, mixed greens, radishes, cucumbers, summer squash, zucchini and beets....and we are only about a month into the season.  I bought lots of garlic scapes and green garlic from the farmer's market and we have been eating pesto like crazy.  SO good.  :)

I was talking to one of my dear friends in Georgia and she mentioned that she freezes corn, summer squash, zucchini and peas for the winter.  That sounded awesome.  So I went to the farmer's market this past Saturday with a mission:  BUY ZUCCHINI AND SUMMER SQUASH.  :)  I told my lovely farmer that I wanted $8 worth, I came home and washed it to prep for storage.

My husband wasn't home so I turned on some fun music, got the kids cleaning (or so I thought!) and I started chopping, slicing and putting the veggies into bags with a bit of water.  It took me about 30 minutes but I was able to freeze enough for 10 meals!!  That means that it cost about 80 cents per bag instead of $2ish from the grocery store.  Yea for winter food! 

Now.  I was obviously checking in on the kids a ton, but THIS is what happens when you leave the littlest alone too long...
